Veggie Lentil Stew

INGREDIENTS
2 1/4 cups dried green lentils, rinsed and drained
4 medium carrots quartered and cut into 2 inch pieces
3 medium leeks halved and cut into 1/2 inch pieces (white parts only)
1 cup chopped celery
2 cups cubed red potato with skin
2 minced garlic cloves or 1/2 tsp powder
28 oz can diced tomatoes with juice
3 cups vegetable brother
10 oz can of condensed cream of mushroom soup or your favourite
3/4 cup tomato juice
3/4 tsp dried basil
1/2 tsp dried thyme
1/2 tsp pepper
DIRECTIONS
Add lentils into slow cooker. Layer next 5 ingredients on top of lentils. Combine next 7 ingredients i large bowl and pour over vegetables. Do not stir. Cover and cook on low for 9-10 hours or high for 4 1/2 to 5 hours. Serves 8.
