Tortilla Soup

INGREDIENTS
1 onion chopped
2 cloves minced garlic
2 ribs chopped celery
1/4 to 1/2 cup chopped bell pepper
1 thinly sliced zucchini
1 thinly sliced yellow squash
1 16oz bag frozen corn
2 cans chicken broth
1 can diced tomatoes
1 small can tomato sauce
1/2 cup chopped cilantro
1/2 teaspoon cumin
1/2 teaspoon chili powder
shredded cheese (Monterey jack or cheddar)
DIRECTIONS
Saute first four ingredients TOSS in a little butter or olive oil. Throw everything else into the crock pot (except the cheese and chips) and cook on low about 6 hours.
Throw in the chips and cheese (to taste) and serve.

this was awesome! My daughter and I are vegetarian, so we used vegetable stock instead. My husband and son eat meat so I cooked two strips of chicken breast on a separate skillet and added cubed pieces to their bowls right before serving. They loved it. |
