Slow Cooker Curried Chicken

INGREDIENTS
1 1/2 lb boneless, skinless chicken thighs
1 onion, chopped
3 potatoes, cubed
1 apple, chopped
2 tbsp curry powder (at least)
2 cups chicken broth
2 cups frozen peas, thawed
2 cups uncooked Minute Rice (or use regular brown rice and add at the beginning)
DIRECTIONS
Place chicken in slow cooker, top with onion.
Add potatoes, apple, curry powder and broth. Cover with lid and cook on LOW for 8-10 hours (or on HIGH for 5 hours)
Stir in peas and rice. Cover and cooker for an additional 20 minutes.
Add salt and pepper to taste.
