INGREDIENTS
1 bag (32 oz.) frozen hash brown potatoes

1 lb. of bacon diced, cooked and drained or 1 lb. cooked ham, cubed

1 medium diced onion

1 green bell pepper diced

1 1/2 C. shredded cheddar or Monterey Jack cheese

1 dozen eggs

1 C. milk

1 t. salt

1 t. pepper (more or less to taste)


DIRECTIONS
Place a layer of frozen potatoes on the bottom of the slow cooker, followed by a layer of bacon then onions, green pepper and cheese. Repeat the layering process two or three more times, ending with a layer of cheese.

Beat the eggs, milk and salt and pepper together. Pour over the Crockpot mixture, cover and turn on low. Cook for 10-12 hours.

Came out very good. I would add more bacon next time though. Left overs make great breakfast burritos

This recipe was easy and great! I would put more bacon and maybe some cooked sausage or something. I enjoyed this very much!

I followed this recipe to the T and it was TERRIBLE! What a waste of food, I feel guilty! I questioned eggs in a slow cooker but thought I'd give it a try, failure! Perhaps the slow cooker is meant to be an oval shaped one? Mine is a tall one and the texture turned out nasty. The smell was horrible. Sorry, no offense to the person who submitted this recipe, but I can't in good faith suggest trying this. I'm totally with the first reviewer!

This recipe sucked! I followed it to a t and it came out WAY! overcooked....on low setting 10 hours. Maybe try it 8 to 10 hours next time??

This is really good! I didn't notice how long it needed to cook before going to bed, so I cooked it on high for 5 hours (then the slow cooker turns to warm automatically). It sat on warm for 2 hours before we ate it. It tasted just like a restaurant!

This was one of the first crock meals we made. Was DELISH!!!!! We lowered the fat and calories a bit by using turkey bacon, 2% milk cheese, and using 6 eggs and 6 egg whites rather than the full dozen. LOVED THIS and will be making it again very soon! (not bad with a little hot-sauce too!)

Great Recipe! Cooked in a 5 quart cooker for 11 hours, and it came out Perfect! There was a burnt crust around the edges of the top, but that is to be expected. Otherwise, perfect!
