Meat Loaf

INGREDIENTS
1/2 cup crushed cheese crackers
1 small onion, chopped
2 tbsp. green pepper, minced
1/4 c. chili sauce
1/2 c. milk
2 eggs, slightly beaten
3/4 tsp. salt
1/8 tsp. pepper
1 1/2 lbs. lean ground beef
DIRECTIONS
First, make foil "handles." Fold a 20 to 30-inch long piece of foil in half lengthwise. Place in bottom of a slow cooker with both ends hanging over top edge of cooker.The foil strip will make it much easier to remove the meatloaf when it's done.
I also put a piece of crumpled foil in the bottom to keep the meatloaf out of the fat.
In mixing bowl combine cracker crumbs with onion, chopped green pepper, chili sauce, milk, eggs, salt and pepper; mix in ground beef. Shape mixture into a round loaf. Place in slow cooker. Cover and cook on LOW for 6 to 8 hours or until done.
Serves 6.
