Easiest BBQ Beef Stew

INGREDIENTS
1 tbsp. oil
2 lb stewing beef, cut into 1 1/2 inch cubes
1 cup of your favorite BBQ sauce, divided
1 tbsp instant coffee
5 medium carrots, peeled, cut into 1 inch pieces (or you could use the pre-cut mini carrots)
1 large onion, cut into chunks
6 small red potatoes, quartered
1 pkg (10 oz) frozen peas (thawed)
DIRECTIONS
Heat oil in nonstick pan on medium-high heat. Add meat, in batches; cook until evenly browned - don't overdo it.
Transfer meat to slow cooker.
Pour 1/2 cup of the BBQ sauce over meat; sprinkle with coffee granules.
Top with onions, carrots and potatoes; cover with lid.
Cook on low for 7-8 hours (or high for 5 hours)
Stir in peas and remaining 1/2 cup of BBQ sauce; cover and cook for an additional 30 minutes.

Very easy. Turns out pretty thick but I thought it was great. I used Famous Dave's Rich and Sassy BBQ Sauce. |

Pretty good, but you need to be sure about the BBQ sauce that you use, this can easily become overpowering. |

This was a very easy recipe and tasty. I would have liked a bit more liquid in the sauce, but the flavor was great. My husband even really enjoyed it and he normally doesn't like stew. |
