I made this recipe with sage instead of Thyme, it was still delicious. I also added carrots and at the end I threw in some peas. I tasted it after two hours and the potatoes were cooked and the spices were still "there" if you know what I mean. I think if you put it on for 8-10 hours it would really be too much, I had it on high for 4 hours and after 4 hours the potatos were only slightly overcooked and everything tasted the same although the soup had thickened into more of a gravy by that time which was nice. But at the high for 2 hours it was fantastic and would have gotten the 5th star. In a pinch, with not to many ingredients, on a nice rainy day with some good crusty bread...this is perfect!!!
