3 lb whole chicken
2 carrots, sliced
2 onions, sliced
2 celery stalks with leaves,
1 ts basil
2 ts salt
1/2 ts black pepper
1/2 c chicken broth or wine

Put carrots, onions, and celery in bottom of CROCK-POT. Add whole chicken. Top with salt, pepper, liquid. Sprinkle basil over top. Cover and cook until done-low 8 to 10 hours. (High 3 to 4 hours, using 1 cup water). Remove chicken and vegetables with spatula. I would suggest thawing chicken before cooking in the crockpot for sure--I don't think it would be safe to let it go from frozen to cooked over such a long period of time.

This was such a delicious, economical dinner - the smallest chicken I could find was 4.85 lbs, and it cost $4.85 - seriously! I don't think I'll ever buy frozen chicken tenders again (at $19 a bag!) Tomorrow I'm using the leftover chicken to make white chicken chili - it literally fell off the bones, and was incredible. I made it as directed. Next time I'll put in more carrots because I LOVE cooked carrots and they were SO delicious, I could have eaten at LEAST five more of them :) Great recipe - thanks!!!

I found this recipe very easy but a bit bland and lacking flavor. I am going to try it next time with a cream sauce.

This was both my first time using a slow cooker, and my first time cooking a whole chicken, so I entered the endeavor with a bit of trepidation. I wasn't expecting anything great. But WOW, this is the best and easiest chicken I've ever made! It took literally 5 minutes to prep and was so moist and flavorful. My "frozen chicken breast tenders" days are OVER-- this is way tastier and cheaper, too.

I am now living in Italy and just got my slow cooker! This was the first recipe I tried and it turned out amazing!! Only my second attempt at slow cookin this recipe was really good. I have a 6 qt. slow cooker and got a 5lb chicken. It turned out so tender that it was hard to get out of the pot without it falling apart! And it was juicy and delicious. Give this recipe a try if your looking for something simple to cook and very little prep work.

I mixed some thyme in with this as well, and used whole pepper grains. Using the 4 hour setting with a full cup of water and a full can of broth, the chicken came out great. Less than 10 minutes to prep and enough food for my lunches for a week!
