Chicken Thighs

INGREDIENTS
6 chicken thighs (remove skin)
1 can Italian-style diced tomatoes (28 oz)
salt and pepper
DIRECTIONS
Throw these in the crockpot and cook on high for about 3 hours. Serve with egg noodles. Can it be more simple?! IF you don't love garlic, use regular tomatoes, but this had a wonderful garlic flavor, we thought. Even the kids liked it, and they usually won't eat anything with sauce. The "sauce" is VERY liquidy, so if you want a more gravy-ish sauce, add some tapioca at the beginning, or partially drain the tomatoes before cooking.

My family loved this. I added about 3/4 cup of red wine, 2 garlic cloves and 1 onion. It was a little watery - might try to thicken it up a bit next time, but it was a crowd pleaser nonetheless. |

There just wasn't enough flavor for me.I added a tsp sugar, italian seasoning and a bit of chili mix(which eliminated the need for the tapioca and included more garlic. By the way corn starch is an economical substitute for the tapioca which is very expensive.) |

This recipe definitely surpised me! I really didn't think it was going to come out as tasty as it did. I added one chopped onion and a few chopped cloves of garlic (my son is a garlic lover) and served it over a bed of rice. Delicious. |
