3 Chicken breasts
1 Egg
1 t Salt
1/4 ts Pepper
1 c Dry bread crumbs
1 1/4 c Butter
1 can Pizza sauce -- 10 1/2 oz
6 slices Mozzarella cheese
Parmesan cheese

If using whole chicken breasts, cut in to halves. In bowl beat egg salt and pepper dip chicken into egg. Then coat with crumbs. In large skillet saute chicken in butter. Arrange chicken in pot. Pour pizza sauce over chicken. Cover and cook on low 6 to 8 hours. Add mozzarella cheese, sprinkle Parmesan cheese on top. Cover and cook 15 minutes. Makes 6 servings.

I would recommend using spaghetti sauce and more than 15 oz. The chicken was very dry after cooking for 7 hours.

I sauted seven single, skinless chicken breasts that had been boned, in a 10" cast iron skillet. I reduced the amount of butter significantly. I followed the recipe other than that and was impressed. As with most cooking, try it and tweak it as needed. Next time I will use 2 TBSP of olive oil, as Barbara did. It really is fork tender and succulent.

Excellent meal! However my variation included no butter and only 1/2 tsp. salt. Browning chicken in 2 TBSP of olive oil worked just fine.
