Autumn Squash Casserole

INGREDIENTS
1 stick of butter, melted
1 onion, chopped
5 lbs butternut squash, peeled and cut into 1/2 inch pieces
1 1/2 cups orange juice
1/2 cup maple syrup
1 tsp cinnamon
DIRECTIONS
Place the butter, onion, squash and orange juice in the slow cooker. Cook on Low for 6 to 10 hours or on High for 3 to 4 hours. Add the cinnamon and maple syrup. Using a potato masher, mash the ingredients. Mix until smooth and serve warm.

I did not like the way this recipe tasted. The onion and OJ didn't give me the flavor I was looking for. Butternut squash is so tasty on its own. I suggest simplifying this to just squash, water, maple syrup and cinnamon/nutmeg. |
