INGREDIENTS
2 large or 4 small chicken breasts
2 parsnips - 2 carrots
1 acorn squash
1 14.5 oz. can of chicken broth
garlic
salt
pepper
nutmeg
honey

DIRECTIONS
Peel and chop carrots and parsnips and place them in the bottom of the crockpot. Sprinkle with garlic (I used a teaspoon of pre-chopped garlic. I'm not sure how many cloves of fresh garlic that would be. ) Place chicken on top. Pour in broth. Cut squash into chunks and slice off the skin. Place on top of chicken. Sprinkle desired amounts of salt, pepper and nutmeg on top of squash and drizzle enough honey on top to lightly cover the squash. Cook on low 8-10 hours.

I cooked this 6 hours on low and think that 8 hours would have been too long. The flavors did not seem to run together as some other reviews mentioned. The squash was a bit mushy and I might try it with a different type of squash, but overall I liked it.

This is delicious. I used a small pumpkin instead of the acorn squash, since this is what I had available in my garden. The pumpkin gave it a delicious flavor. It is a delicious warm dish to be enjoyed on a cool fall day.

I agree with the last review, I wasn't sure if it was just me. The chicken was very dry, which was very surprising,and I couldn't taste any distinct flavors in it at all.

I hate giving negative reviews on recipes and I'm sorry but this was just not good...the vegetables fell apart and the chicken made this weird brown film that coated everything. Not to mention the fact that the meat was as dry as could be even though I cooked it in 2 cups of chicken broth. I'm really sorry...I just didn't like this at all.

loved this recipe especially because I could puree some of it and serve it to my baby (8 months) and she LOVED it! I also included sweet potatoes and it was delicious. I prepared it the night before and let it sit because I wanted the flavors to mix. One time, in a pinch, I used water with chicken boullion sprinkled in instead and it was fine but a tad on the salty side.

Everything ended up tasting like everything else. No distinct flavors. Perhaps that's just how slow cookers are, though.

Very good. I did it with a whole chicken and used a bit more vegetables. I think next time I will add sweet potatoes too.
