2- 14 oz. cans black beans, drained
1 medium onion, finely diced
4 cloves garlic, minced
1 Tbs. ground cumin
1 tsp. cayenne pepper
14 oz. fresh goat cheese, crumbled (or any other fresh farmer’s cheese)
¼ cup green onions, thinly sliced (reserve 1 Tbs. for garnish)
¼ cup fresh cilantro, chopped (reserve 1 Tbs. for garnish)
2 Tbs. pumpkin seeds, shelled and toasted, for garnish

Combine all the ingredients in the Crock-Pot® slow cooker, except for the garnish ingredients.
Transfer to your serving dish and garnish the top with a sprinkling of green onions, cilantro, and pumpkin seeds.
