INGREDIENTS
4 medium carrots, chopped
4 celery, chopped
2 medium onions, cut in chunks
1 large green pepper, chopped
19 oz can of chick peas
1 can of baby corn, drainer - or - 1 cup frozen corn
1 can of diced tomatoes
1/3 cup of tomato paste
1/3 reserved juice from tomatoes
1/3 cup of salsa
1 1/2 tsp chili powder (or more to your tastes)
1 1/2 tsp of cumin
1 tsp of dried oregano
salt and pepper to taste
Tabasco sauce to taste
2 small zucchini, halved lengthwise and cut in 1 inch pieces
1 med red pepper, chopped
Cheddar cheese for garnish

DIRECTIONS
Layer first 7 ingredients.
Combine next 8 ingredients in medium bowl and pour over tomatoes.
Cook on low for 8-10 hours or on high for 4-5 hours.
Add zucchini and red pepper, cook on high for 20-25 mins.
